<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Soak the nuts overnight, or at least for 10-12 hours. The next day discard the water and wash them through running water. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Place all ingredients to a S-blade food processor and process until a smooth dough is formed, and everything sticks together (usually this means a big ball of dough running around your food processor ;). </span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Place the crust to a cake form, even it out with your fingers throughout the base of the form, and place it to the freezer while you are working on the filling.</span></span></span></li>

Add the cocoa powder spoon by spoon, slowly stirring each spoon into the coconut oil - maple syrup mixture. Keep on stirring until a smooth paste is formed. This will make it easier to mix the cocoa well throughout the filling. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Place all ingredients, but the milk, to a S-blade food processor (or a high speed blender, if you have one). Leave a little orange zest for decoration.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Start by pressing the "Pulse" function on your food processor, and gradually mix all ingredients well together.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Add as much milk as you need to create a very smooth dough -> keep on mixing until you create a very smooth, chunk free paste. </span></span></span></li>

I normally cook my own beans, but when I forget to pre-soak <span style="font-family: "verdana" , sans-serif;">them</span>, or I am under time pressure, I use canned beans. Please make sure,<span style="font-family: "verdana" , sans-serif;"> that</span> you wash the beans under running water, as the cans contain BPA, which you don't want to eat..</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">P</span>repare the egg replacer: mix 2 tbsp of ground flax-seed with 6 tbsp water and set aside for a couple of minutes, until the flax-seed soaks up the water.</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Wash the zucchini, peal and wash the carrots, peal the onion and put everything into a food processor with an S-<span style="font-family: "verdana" , sans-serif;">blade</span>. Start to mix using the "Pulse" functionality. If the dough gets too dry, add some water. If it gets over sticky, add some more oats. </span></span></li>

I found some veggies in the fridge and some chickpeas from preparing hummus the day before: and here is the result :)</span></span><br />
<span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">I sprinkle black sesame seeds on almost all soups, as they are filled with iron, Calcium, Vitamin B6 and Magnesium. These seeds are a well consumed to prevent hair fall and even prevent aging :-) Worth to give them a go :) </span></span><br />

Once the water is boiling reduce the heat to medium and cook the veggies until they become soft (please check with a fork :) </span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;">Once the veggies are soft, add the cooked chickpeas and bring everything to boil once again.</span></span></li>

The one on the top picture is from the summer and the one below is from yesterday. This time I used much more chickpeas, no tomatoes and it turned out very tasty :) The soup tastes as well somehow better during the winter times. It is very warming and somehow satisfying to munch on it, while looking outside the window on the snow. You can imagine it right? Nice and cozy place, spicy soup is warming you up from the inside :) I love these times during winter. </span></span><br />

<span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">The ingredients seems like a lot at a first glance, but actually this soup is very easy to make and takes the same time until your chickpeas are cooked in a pressure cook.</span></span><br />

<span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><u><b>Method:</b></u></span></span><br />
<ol>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Soak the chickpeas overnight (10-12 hours) in at least 3-4x more water (they will soak up the water very fast).</span></span><br /><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">Th</span>e next morning discard the water from the chickpeas and rinse them with fresh water</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Put the chickpeas in a pressure cooker and cook for about 15-20 minutes (3x less time as stated on the package).</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Meanwhile, wash and cut the cauliflower and potatoes (and tomatoes, if used) into smaller cubes and set them aside. </span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">In a big pot heat up the coconut oil and add the onion. Add the garlic by </span></span><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">pressing it through a garlic press</span></span></span></span></span></span><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"></span></span>. Saute for about 5 minutes, until onions get a bit translucent.</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Add the curry powder and mix it <span style="font-family: "verdana" , sans-serif;">w</span>ith the onion and garlic.
Cook for half a minute<span style="font-family: "verdana" , sans-serif;">, then </span>add the cauliflower and potatoes<span style="font-family: "verdana" , sans-serif;"> (and tomat<span style="font-family: "verdana" , sans-serif;">oes, if used). </span></span>Mix
everything well together.<span style="font-family: "verdana" , sans-serif;"> This should take <span style="font-family: "verdana" , sans-serif;">another <span style="font-family: "verdana" , sans-serif;">half a minute or so. </span></span></span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Add the tomato sauce to the pan <span style="font-family: "verdana" , sans-serif;">with </span>a little bit of boiling water. <span style="font-family: "verdana" , sans-serif;">Mix in <span style="font-family: "verdana" , sans-serif;">the</span></span> salt, pepper, vegetable broth, chili, turmeric and coriander.<span style="font-family: "verdana" , sans-serif;"> B<span style="font-family: "verdana" , sans-serif;">ring the water to b<span style="font-family: "verdana" , sans-serif;">oil for a m<span style="font-family: "verdana" , sans-serif;">oment<span style="font-family: "verdana" , sans-serif;">, then turn the </span></span></span></span></span>heat to medium.</span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">By this time the chickpeas <span style="font-family: "verdana" , sans-serif;">shou<span style="font-family: "verdana" , sans-serif;">ld be </span></span>cooked. Remove them from the pressure
cooker and rinse them with water. Add the chickpeas to the pot with all other ingredients<span style="font-family: "verdana" , sans-serif;">. <span style="font-family: "verdana" , sans-serif;">Pour in </span></span>as
much hot water, so that <span style="font-family: "verdana" , sans-serif;">the veggies are sticking out a little bit. </span> </span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Cook for about 20 minutes on medium heat, covered. </span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Serve hot alone, or with flatbread :) Sprinkle on <span style="font-family: "verdana" , sans-serif;">top <span style="font-family: "verdana" , sans-serif;">some</span> black sesam<span style="font-family: "verdana" , sans-serif;">e seeds. </span></span></span></span></li>

<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">In a separate bowl mix together the dry ingredients: flour, baking powder, baking soda, brown sugar, vanilla, cinnamon, cardamon, ginger powder, salt.</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add the carrot mix to the dry ingredients and mix well. Use your hands to mix the dough together. It takes a while until all ingredients are mixed, so stay with it, it will nicely come together :)</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Take a rectangular cake pan (or whatever pan you have at home) and coat is thinly with coconut oil.</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Pour the dough into the pan and press is slightly with your fingers, evenly distributing it throughout the pan.</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Bake on 165° for about 60 minutes. </span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Leave the cake inside the pan for about 10-15 minu<span style="font-family: "verdana" , sans-serif;">tes. <span style="font-family: "verdana" , sans-serif;">After that<span style="font-family: "verdana" , sans-serif;">, take it out from the pan and leave it on a rack to cool.</span></span></span></span></span></span></li>

<li><span style="color: #444444;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">In the morning rinse the beans with fresh water and cook them in a pressure cooker for around 15-18 minutes. If you don't have a pressure cooker, then cook the beans as it is shown on the package.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">When beans are cooked, rinse them once again under fresh water and add them to a food processor with a S-blade. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Add all other ingredients and process until smooth, but still a bit chunky. </span></span></span></li>

If you have a pumpkin with seeds inside, please remove the seeds first with a spoon. Put the flesh into a big pot.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Wash and peel the carrots and potatoes; cut them into bigger slices. Peel the ginger, cut it into smaller pieces and add all (carrots, potatoes and ginger) into the pot with the pumpkin waiting :) </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add as much water that it just covers the veggies in the pot. Turn the heat to high and wait until the soup starts boiling. Meanwhile, add the spices: vegetable broth, turmeric, cumin seeds, cinnamon, curry and salt. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Once the soup is boiling, reduce the heat to medium and cook for around 15 - 20 minutes, until the pumpkin becomes soft. </span></span></span></li>

Add the Tamari sauce, walnut oil, dried tomatoes and pepper. Take the immersion mixer and mix the soup until smooth.</span></span></span></li>

Sauces, soups, veggie dishes, even desserts! This time I made these Zoodles (zucchini noodles) with some pumpkin sauce. The recipe is very easy, the only thing which takes a bit of time is to roast the pumpkin.</span></span></span><br />

<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">First, cut the pumpkin
into half, then remove the seeds with a spoon and place the pumpkin to a
baking dish filled with water, covering about 2-3 cm of the bottom of the
pumpkin. Preheat the oven to 180° Celsius and bake the pumpkin uncovered
45-60 minutes, or until tender.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">When the pumpkin is ready and has cooled down, scoop out the pumpkin flesh into a mixing bowl. Discard the skin.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add the spices (curry, turmeric, salt and pepper), tamari, walnut oil, apple cider vinegar, dried tomatoes and oat cream to the mixing bowl. Start mixing everything together using an immersion mixer, while adding as much water as you need to get a similar consistency as in the picture (not too liquidy but not too solid, something in between).</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Spiral the zucchinis with a spiralizer. If you don't have one, you can use a simple potato peeler to get thin slices :) If you like, just use normal pasta :)</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Heat a tiny bit of oil (I use coconut oil) in a pan to medium heat, add the sunflower seeds and roast until the seeds become golden. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Assemble the dish by placing the Zoodles in the middle of the plate, adding the pumpkin sauce . Top with the roasted sunflower seeds.</span></span></span></li>

I usually eat potatoes only cooked in slightly salted water. The potatoes were from a day before already cooked, so we decided to bake them. For baking, preheat the oven to 200° and lay the potatoes onto a baking paper in a baking pan. Slightly sprinkle with olive oil, add the herb mix evenly distributed, and bake until skin becomes brown and crispy, around 30 minutes (depends on the oven). Add slices of onion, if you like.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">To prepare the Tempeh, cut it into slim pieces. Preheat 1tbsp of coconut oil in a pan and sauté the Tempeh 2-3 minutes on both sides, until it becomes golden brown.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">To prepare the Swiss chard, wash and cut it into 2-3 cm pieces. Together with the garlic add it to a pan with a little bit of water and simmer for a few minutes. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">Wash the summer salad and separate the leaves into smaller pieces with your hands.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: "verdana" , sans-serif;">Assemble the dish on your plate by adding a portion of potatoes, Swiss chard, salad and Tempeh. We added a leftover of guacamole, for which I will make a separate recipe :)</span></span></span><br />

Gradually add the water as you start mixing the ingredients. Add as much water, that a fluid sauce is created.</span></span></span></li>

<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">In a small mixing bowl mix all ingredients for the dressing together. Pour it over the salad mixture and massage the dressing into the salad with your hands. It's great to feel your food, while you are preparing it:)</span></span></li>

<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Wash and slice the carrots. Wash the zucchini and cut it to cubes. Wash the cabbage and slice it as well.</span></span></span></li>

Cover and cook on medium for 3-4 minutes. Process until a smooth, sticky paste is formed and everything is well combined. If the paste is too dry, you can add more date syrup or a bit of water. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: Verdana,sans-serif;">Add the almonds and pulse a few times, so the almonds are not completely processed and some coarse pieces reamin in the paste.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: Verdana,sans-serif;">Take a small portion from the paste and form small balls between your hands.</span></span></span></li>
<li><span style="color: #444444;"><span style="font-size: small;"><span style="font-family: Verdana,sans-serif;">Coat the balls with coconut shred, sesame seeds or cut almonds .. as you like :).</span></span></span></li>

Cook the cabbage on medium heat with a closed lid, until the water is gone. </span></span></span></li>
<li><span style="color: #444444;"><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;">Meanwhile, in a separate mixing bowl mix almond cream with water, salt and pepper. Pour it over the cabbage mix. Turn off the heat. </span></span></span></li>

processor and process until a smooth paste is formed. Add in the walnuts, salt and vanilla and pulse a few times, so the walnuts stay chunky. Press the dough firmly into the
bottom of either a cake or pie form. Put the crust to the freezer to set for approximately 30 minutes. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Meanwhile,
prepare the filling. Place all ingredients into a high speed blender but LEAVE the cocoa out. Blend on high until a very smooth and
creamy batter is formed. If you need, add more rice milk (or liquid sweetener for a sweet tongue :) to the paste. If you don't have a blender you can as well
use a food processor. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Take about 3 tbsp of the batter in a separate bowl for decoration. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add the cocoa powder to the blender, and process until everything is mixed well together.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Pour the filling over the crust, distribute evenly using a spatula or by
shaking the form side to side. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Take the paste for decorating, which you have previously separated (in step 4). Put it into an icing kit, and decorate your cake following your own fantasy :)</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Place the cake to the fridge and refrigerate at least for 3-4 hours. The best is to refrigerate overnight, covered. </span></span></span></li>

I have used a little smoked paprika instead and got the nice smoky taste. Something very special for Hungarian soups is called "Rántás". This is a procedure of mixing oil, flour and paprika powder and adding it to the soup at the end of cooking. This gives the soup a nice red color and makes it more thick. I will explain below how to prepare one :) For this amount of soup I was supposed to use much more oil and flour, according to the traditional recipes. But I tried to keep the soup light and not too oily with too much flour in it. </span></span></span><br />

This step is not necessary, so if you haven't soaked the lentils, you can still make this soup :) Just make sure, that the lentils will be cooked and the veggies don't overcook meanwhile. The next day discard water and rinse the lentils. </span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Wash the carrots and celery stalks and cut them into small pieces.</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Peel the potatoes and onion and cut them into smaller cubes.</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Heat 1 tbsp of olive oil over medium heat in a big pot. Add onions and sauté until onions become glassy, about 5 minutes. </span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add tomato paste, garlic, bay leaves and oregano. Sauté for a few more minutes</span></span></span></li>
<li><span style="font-family: "verdana" , sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add stalks of celery, carrots, potatoes and smoked paprika powder. Mix well.</span></span></span></li>

processor and pulse until a coarse meal is formed. Add in the dates
and process until you have a sticky dough. Press the dough firmly into the
bottom of either a cake or pie form. Transfer the crust to the freezer to set for approximately 30 minutes. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Meanwhile,
prepare the cashew "cheese" filling. This is done simply by placing all the ingredients
into a high speed blender and blending until you have a very smooth and
creamy paste. If you don't have a blender, don't worry, you can as well
use the food processor. However, I find that processing the cashew with
all other ingredients in a high speed blender gives even a more creamier
texture.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Pour 3/4 of the filling over the crust, distribute evenly using a spatula or by shaking the form side to side. But not too much shaking here ;)</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Add the berry filling ingredients to the remaining cashew "cheese" in the blender. Blend until smooth. The berry mix should have an ice cream texture, it shouldn't be too watery. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Take pieces of the berry filling with a spoon and place it over the cashew "cheese" (which is still liquid), leaving spots of the cheese filling visible.</span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Take a wooden stick and start mixing the berry filling into the cashew "cheese" simply by making little circles all over the cake. Go crazy :) This will mix the two layers together nicely. </span></span></span></li>
<li><span style="font-family: Verdana,sans-serif;"><span style="font-size: small;"><span style="color: #444444;">Place the cake to the freezer and freeze for 3-4 hours. Cover, and freeze overnight. </span></span></span></li>
