Breakfast to-go

 

Have you ever woken up late? or just didn't have time to eat breakfast before going to work/school? Ending up skipping the breakfast rather than being late?
I am sure you have, just like me :) 
Well.. I have good news for you, with this breakfast to-go you will not need to skip the "most important meal of the day" again: you can just take it with you on the road. Even better news is that it only takes literally 3 minutes to prepare :) You can then assembly it at work or wherever you are, and eat it when you have time. Perfect, isn't it? :)


What will you need:
- 1/2 cups of gluten-free oats
- 1 tbsp chia seeds
- 1 tbsp of hemp seeds
- a handful of a mixture of dried fruits (mulberries, pineapple, goji berries - or whatever berries you have at home)
- 200 ml of millet milk (or any plant-based milk you like)
- 1 banana (optional)  


Method:
  1. Place all dry ingredients into a glass, which can be easily sealed (oats, chia and hemp seeds, dried fruits). 
  2.  Pour the milk into a smaller glass. I used an old smoothie glass for this:)
  3. Pour the milk over the oats once you are ready to eat. Top the oats with the sliced banana. Wait a few minutes until the oats soak up the milk. If you need more liquid, just add a bit of water (warm if you like).  
  4. Enjoy this quick and healthy breakfast wherever you go :)

New years banana pancakes


Happy new year to everyone. I haven't been posting for a while, because I was away for the holidays. I hope you had a wonderful time with your friends and family:) We have started our new year with these cute little pancakes in our brand new pancake pan, which we have received for Xmas :) I guess my family already knows, that we are pancake addicts :P

here is what you will need:
- 1 cup of spelt flour
- 1 cup of oat-bran (oats cut very thinly)
- 2 cups of rice milk (you can use as well mineral water or any other plant based milk)
- 1 ripe banana
- 1 tsp pure vanilla
- 1 tsp turmeric
- 1/2 tsp cardamon (optional)
- a pinch of salt
- pinch of nutmeg 
- 2 tsp baking powder (phosphor free)
- 1 tbsp sugar beet syrup (or maple/date syrup)
- date syrup, banana and walnuts for topping


  1. Start with mashing the banana with a fork.
  2. Combine gradually all ingredients in a mixing bowl and add the mashed banana.  
  3. Leave the dough to sit for 10 minutes, so that the oats can soak up the liquid. Add mineral water or plant-based milk, if the batter gets too thick. The batter should be fairly thick, but thin enough to drip from the whisk.
  4. Coat a skillet pan with a bit of coconut or olive oil and heat it up to medium heat.
  5. Take a part from the dough and pour it to the skillet making a circular form.
  6. Cook the pancakes on medium until little bubbles are formed and outer edges become golden. Flip the pancakes and cook until golden.
  7. Top with date syrup, walnuts and bananas :)

Spicy breakfast porridge

Here is another super easy porridge recipe.  It is nice and warming in the colder winter days :)

 What will you need:
-  appr.1/ cup oats
-  appr. 1cup oatmilk
- 1 banana
- 1/4 tsp cardamon
- 1/4 tsp cinnamon
- 1/4 tsp powdered ginger 
- 1/4 tsp pure vanilla
-  a pinch of salt
- 1 handful of hazelnuts
- 1/2 tbsp maple syrup (or more according to taste) 

  1. Roast the hazelnuts in a pan on high heat for about 5 minutes. I didn't use any oil for roasting.
  2. Place oats with oatmilk to a pan and cook them on medium heat for 2-3 minutes.
  3. Add the banana and the spices and cook for more 2 minutes. Turn off the heat
  4. Place the oatmeal to a dish and top with roasted hazelnuts and maple syrup
  5. Enjoy this warming breakfast :)

Breakfast oatmeal porridge

I love oatmeal for breakfast. It is really the easiest thing to prepare and takes only a few minutes. Basically no time, for such a goodness :)
It is nutritious, delicious and warming when it is getting cold outside. There are literally hundreds of variations of a tasty breakfast made out of oats. Here is one of them:

What will you need:
- appr.  1/3 cup oats
- appr. 1 cup of water
- 1 handful of frozen raspberries
- 1 handful of mulberries (or any dried berries)
- 1.5 tsp hazelnut butter (or any nut butter you like)
- 1 tbsp date syrup
- 1 tsp flax-seed


We are normally using these 2 types of oats from Demeter. Both of them are pre-cut to smaller pieces, which are faster to cook. The second one is gluten-free, which is great for someone with gluten intolerance :)

Direction:
  1. Place oats with water to a pan and cook them on medium heat for 2-3 minutes.
  2. Add the frozen raspberries and cook for more 2 minutes until berries are warm. Turn off the heat
  3. Place the oatmeal to a dish and top with hazelnut butter, mulberries, date syrup and flax-seed
  4. Serve and enjoy :)

Fluffy blueberry pancakes



It has became our traditions to have pancakes on Sundays for breakfast.  I can't imagine our Sunday mornings without them anymore :) Nothing can change it....in case we don't manage on Sunday morning, we would make them for dinner :P I know I know...but pancakes are just too good to leave out! They make the start of the day more enjoyable and I am always looking for the time we spend in the kitchen with my partner to make new and new variations of them..

These pancakes are so delicious, I am sure you will love them. I absolutely love to add some fruits into the dough. I love to see how the juice of the fruits color my plate ..i know its a lot of "love", but that's just what pancakes deserve :D

So what will you need to make your Sunday a more beautiful day:

- 100 grams of spelt flour
- 230 grams of oat-bran (oats cut very thinly)
- 500 ml of oat milk (you can use as well mineral water or any other plant based milk)
- 1 tsp vanilla
- 1 tsp turmeric
- a pinch of salt
- 1 tsp cinnamon
- 2 tsp baking powder (phosphor free)
- 4 tbsp maple syrup
- 150 grams of blueberry

This portion serves around 4hungry people :) 
  1. Start with combining the dry ingredients (spelt flour, oat-bran, vanilla, turmeric, salt, cinnamon, baking powder) together.
  2. Combine the wet ingredients (maple syrup and oat milk) in a separate mixing bowl. 
  3. Gradually pour in the wet mixture to the dry, stirring continuously until combined. The oats and flour can soak up the milk differently, depending on the brand. Therefore, you might end up using more or less oat milk, as I have listed in the list of ingredients. Keep on adding the oat milk and mixing the dough until you get a smooth batter. The batter should be fairly thick, but thin enough to drip from the whisk.
  4. Leave the dough to sit for 10 minutes and fold in the blueberries.
  5. Coat a skillet pan with a bit of coconut or olive oil and heat it up to medium heat.
  6. Take a part from the dough and pour it to the skillet making a circular form. If you have a bigger skillet, you can make more pancakes at once :)
  7. Cook the pancakes on medium on one side for about 2minutes, or until little bubbles are formed and outer edges become golden. Flip the pancakes and cook for more 2minutes, or until golden.
  8. Top with more blueberries, maple syrup or almonds.

Raw breakfast buckwheat porridge

Did you know that buckwheat is not a cereal grain? It is actually a fruit seed :) Despite of it's name, it has nothing to do with wheat and it's completely gluten-free. I like sprouted buckwheat (by soaking it overnight in filtered water), so I can enjoy the full nutritional benefits for breakfast. It is alkaline forming in digestion, so really a great way to kick off your day :D Sprouted buckwheat is also a great post workout snack, because it contains both carbs and all 8 essential amino acids, which are necessary to refuel our body and muscles.  
Buckwheat is on of the most nutritious foods out there, it is low on glycemic index (helps  diabetes), yet high in fiber (helps controlling appetite and shred extra weight). It is rich in manganese, phosphorus, copper, magnesium and antioxidants. It helps lowering blood pressure and high cholesterol.

What will you need: 
For 2 portions:
- appr. 1 cup of buckwheat groats, soaked overnight
- 1 cup of plant based milk (I used home made almond milk)
- 2 bananas
- 2 tbsp maple syrup (or honey)
- 1 tbsp chia seeds
- 1 tsp flaxseed, grounded
- 1 tbps almond butter
- 1/2 tsp vanilla
- 1 tsp cinnamon
- pinch of sea salt
- additional maple syrup, banana and almond butter for topping, according to taste

Place buckwheat groats, oat milk and vanilla in food processor or blender. Process until blended. Add the remaining ingredients and blend until smooth and creamy. Scoop into two bowls. Top with the sliced banana, almond butter and maple syrup.
